Tonight’s Special Is…

About 99% of the time, I avoid boxed foods/dinners/what have you. It’s not often we make something that has the letters “EZ” in the name or come in strange, not natural colors. And then every so often, I get drawn in by the vibrant colors and promises of tasty food in minutes and succumb. The night will come where hunger prevails, and once again, the colorful box jumps at me screaming “Eat me! I’m tasty!”
Tonight’s kamikazi box of food was a Spicy Kung Pao selection from Thai Kitchen’s Simply Asia line of food. As promised, within 10 minutes, it was ready – a salty slimy mess of gooey noodles, stale peanut sprinkles and chicken and mushrooms I had prepared while the noodles boiled.
It’s times like this that remind me why it is I spend 15 or 20 minutes on dinner and use Real Actual Food. But lately, my repertoire of meals has gotten as stale as the peanut sprinkles on tonight’s dinner. This brings me to the actual point of this post. What have you been eating lately? I’m in a rut and looking for ideas and recipes to pull me out of this cavern of tacos and burritos.

    We buy rice noodles for Pad Thai at the asian market. Then add chicken, green onions, cilantro, pad thai sauce (which is paprika, fish sauce, rice vinegar, soy sauce, brown sugar and something else that I don’t remember right now), bean sprouts, and lime. Delicious!
    Kris decided to buy a seasoning packet for Fried Rice the other day, and he loves it. I’m convinced that all it is is MSG, but if he likes it enough to cook, whatever. :)
    Also… quesadillas. Burritos. Frozen pizza. Rice and beans. Pork chops or roast with rice. I can’t think of anything else right now…

    mmm, lately it’s been this chicken spaghetti (you can buy rotissery chicken -peel skin off- and shred it to put in this so it goes even faster!) but it’s about 4-6 oz. cooked chicken, 2 cans rotel (I drain one can), 2 cans fat-free cream of chicken soup, one 16 oz. pkg. of cooked spaghetti noodles ~ dump it all in a caserole dish, stir, and bake uncovered for about 20 minutes at 350. It sounds wierd, I know, but it’s really tasty, a little spicy, and it feeds an army…plus it’s super fast. :)

    Most of my recipes take a little longer. One favorite quick recipe is drained canned tuna mixed in with rice, right on your plate. Then you control how much tuna. Of course, add soy sauce.
    Easy potatoes to make: 3 to 4 potatoes about the size of your hand, cleaned and cut into about 6 pieces each. One envelope of Lipton’s Onion Soup mix added to 1/3 cup of olive oil in a plastic bag. Toss in potatoes and coat. Put in flat open pan. Bake at 425 for about 35 min. turning the potatoes once. It makes enough for 4 servings, but they warm up well.
